Fresh Pasta with Seafood Sauce


Fresh Pasta

200g flour

2x eggs

1x egg yolk

Seafood Sauce

500gm prawns

8x oysters in the shells

125g scallops

60g butter

2x cloves garlic, crushed

½ cup dry white wine

300ml cream

¼ cup water

1tbsp cornflour

1tsp lemon juice

Salt and pepper

1tbsp chopped parsley

3x shallots


1.Pour the flour out onto a clean working surface and make a small well in the middle.

2.Add to the well the eggs and egg yolk and mix/knead together until you have a smooth and shiny texture.

3.Set your pasta dough aside for 20 minutes. method

4.Once your dough has rested, you can start rolling it out. Cut the dough into small segments and pat out into a flat round shape.

5.Roll the pasta through the pasta maker on the highest setting, and continue to do so decreasing settings to create your desired style of pasta.
